Every menu is rooted in evidence-based nutritional guidance, informed by leading experts like Dr. Tim Spector, Dr. Caldwell Esselstyn, and Dr. Neal Barnard—whose research shows that plant-based eating can help prevent, lower the risk of, and even support the restoration of balance for those managing chronic conditions such as heart disease, diabetes, high blood pressure, high cholesterol, and overweight. At the same time, my approach is spiritually inspired—drawing upon ancient wisdom passed down through generations, such as the mindful, harmonious principles of Japanese culinary tradition and the reverence for food I learned from my grandfather, a Chinese Master Chef.
