Recipe: No-Oil Gemstone Leaf Salad with Ginger-Cinnamon Scrambled Tofu
Serves 2

Ingredients

Salad:

  • Mixed salad leaves (dark green and red), 120g

  • Pomegranate seeds, 40g

  • Salad cress, a handful

  • Firm tofu, 200g

  • Red grapes, 16

Dressing:

  • Fresh ginger, 40g

  • Ground cinnamon, 1 teaspoon

  • Lemon, 1.5

  • Maple syrup, 1/2 teaspoon (For those managing high blood pressure, even natural plant sweetness - better than refined sugar -  is best used sparingly. Omit if your doctor recommends a sugar-free diet.)

  • Adjust the quantity per your personal taste

Method

  1. Clean all ingredients thoroughly.

  2. Cut grapes in half.

  3. Slice tofu into 2cm-thick slabs. Heat a flat pan over medium heat and warm both sides of the tofu for about 3 minutes each, until a time of golden at the edges.

  4. Lay salad leaves flat on your serving plate.

  5. Scatter grapes, salad cress, and pomegranate seeds over the leaves. I do it by layers for a beautiful creation.

  6. Cut tofu into 2x2cm cubes, then gently scramble and scatter them on the salad—like little clouds of plant-based “cheese” :).

  7. Whisk together the dressing ingredients until smooth and even. Drizzle over your salad.
